1. Introduction
Roasted sesame seeds are natural or hulled sesame seeds that have been dry- or oil-roasted to enhance their flavor, aroma, and crunch. The roasting process deepens the nutty profile of the seeds and improves their shelf life. 2. Processing of Hulled Sesame Seeds
Step-by-Step Process:
Cleaning:
Raw sesame seeds are cleaned using sieves, aspirators, and destoners to remove dust, stones, sand, and other foreign matter.
Selection (Optional):
Depending on the desired quality, only uniform, mature, and high-oil-content seeds are selected for roasting.
Roasting:
The cleaned seeds are roasted either in rotary roasters, fluid-bed roasters, or drum roasters at controlled temperatures (160β200Β°C) for a specific duration (3β10 minutes), depending on the type of sesame (white, brown, or black) and the desired roast level.
Cooling:
After roasting, seeds are immediately cooled using ambient or forced air to prevent over-roasting and to lock in flavor and crunchiness.
Sieving & Grading:
The roasted seeds are sieved and graded to remove any burnt or broken seeds and to ensure uniformity.
Packaging:
The finished roasted sesame seeds are packed in airtight laminated pouches, PP bags, or vacuum-sealed packs (10β25 kg) to retain freshness and prevent rancidity.
